Pumpkin Lovers - Gotta try this!
I made Trader Joe's Pumpkin Bread into cupcakes - I just followed the recipe on the box (add eggs, oil, water) and poured it into cupcakes instead of a bread pan.
I made cream cheese frosting:
1 8 oz cream cheese
3/4 stick of butter
2 cups powered sugar
1.5 teaspoons vanilla
Cream cream cheese and room temperature butter with mixer. slowly add sugar and then stir in vanilla at the end.
AMAZING! All my friends were raving!!!!!
