Brought a butternut squash at the farm the other day but now what do i make with it. There is just 2 of us in the house

I make a curried butternut squash soup that is good and relatively healthy. I've also made homemade raviolis stuffed with butternut squash in sage brown butter drizzle.

I've made soup, roasted it, boiled and mashed it...there is a lot you can do with it.

I just made this Ravioli with Sauteed Butternut Squash from Women's Day magazine. It was SO easy and quick to make, and a nice change from the usual red sauce we have with ravioli.

...made it yesterday..so easy and so delish
I added bacon for added flavor

Butternut Squash au Gratin ..
made this last week...also delish

Butternut Bisque
Butternut Bisque Soup
Rich and luscious soup that is wonderful when butternut squash is in season.

1/2 gallon light cream

2 pounds butternut squash

1/2 tablespoon cinnamon

2 1/2 tablespoons brown sugar

1/2 tablespoon molasses

1/2 cup orange juice

White pepper

Salt

Bake or steam butternut squash; cool. Puree squash in a food processor or use an immersion blender.

Heat the cream and orange juice together. Combine the squash and liquids and bring to a light boil. Add cinnamon, brown sugar, molasses, salt and white pepper, to taste.

Serve immediately.
