Name your favorite side dish with dinner! I feel like I am running out of ideas these days!

Lately I've been roasting veggies a lot.
Brussels sprouts Tiny potatoes (or large ones cut up) Carrots Zucchini Cauliflower Mushrooms (I add these later because they cook quickly)
Drizzle with some olive oil, throw in some cloves of garlic, fresh-ground black pepper, a little salt...roast in the oven at about 400* or so for maybe 40 minutes? Oven times vary.
I roast a huge tray and we eat it through the week with lunch or dinner.

I like roasting veggies, too. Four of our favorites:
-Roasted baby red potatoes with garlic, olive oil, sea salt and cracked black pepper.
-Red, brown and wild rice pilaf with mushrooms, onions (and a shallot, if I have) and a snip of thyme. I saute the onion and mushroom in a little bit of butter and olive oil for a few minutes then add the rice and stir to coat, add beef stock in place of water and a splash of red wine, cover and simmer until done.
-Garlic white rice. I'll sometimes add toasted sesame seeds which gives it a nutty flavor.
-Garlic mashed potatoes.

I recently discovered Trader Joe's frozen polenta with spinach and carrots and their frozen butternut squash risotto, and mushroom risotto. YUM!

Roasted Brussels Sprouts are my favorite in the winter.
I also like sauteed asparagus and sauteed spinach (with garlic and olive oil).
I love buttered peas and I'm a big fan of glazed carrots.
For starches I like sweet corn in the late summer.
I love baked potatoes - especially sweet potatoes. I'm a big fan of scalloped potatoes and twice baked potatoes too.
We also love cous-cous and quinoa and rice.. there are just so many ways to prepare them!

We make a lot of salads at our house. Not fancy but usually some zesty arugula and chopped veggies.

for Roasted Brussels Sprouts after I wash the Brussels Sprouts, I place them in a bowl and drizzle with EVOO sprinkle with sea salt and black pepper (coat them really well), place on a cookie sheet and cook at 400 degrees for 30-45 minutes, turning them over half way through. Yummm!
for mixed veggies I do the same thing but add, some fresh herbs (thyme, fresh parsley) sliced onions and garlic cloves. . . sometimes I add some balsamic vinegar

i just made the following sides the other night: broccoli rabe (i love it) and i made cauliflower steamed w/ diced tomato and garlic in a pot (my grandma used to make it for me when i was younger, though i can't replicate the recipe exactly!)
