Need some delish Butternut squash recipes...
So I bought a WHOLE lot of butternut squash at Costco and looking for some ideas on how to use/prepare them...
I made this recipe the other day
Butternut Squash Au Gratin
and it was DELISH (anything with bacon is delish though!  )
My mom made a Butternut squash risotto..she said it was good. I may try that tonight..
any other suggestions?

Put chunks/large pieces of the butternut sq in a large ziploc with honey and balsalmic vinegar. Marinate it for a while (if you can). Bake it in the oven and done.

I like butternut squash soup with minced fresh ginger (usually my first course at thanksgiving dinner) Or for a heartier soup I make it with breadcrumbs and cream
