polenta
i've never had it before and bought it at trader joe's to try tonight. it lists a few ways you can prepare it. what is your favorite way to prepare it? im kind of in the mood for something creamy so can i put it in a pot and add some parmigianno reggiano?

Re: polenta
Is it the instant mix kind or the kind that comes in a log shape?
If it's the instant kind you can make it and then mix in all sorts of things. I've done a honey mustard version, you can mix in any kind of cheese you like, dijon or whole grain mustard go well. It also goes well with red sauce. I tend to use polenta like mashed potatoes.I've even topped chicken pot pie with it instead of a crust.
If it's the log kind you can cut it into discs and pan fry it and use it like bread and top it with different things, kind of like a bruschetta. You can deep fry it and make polenta cakes and serve with marinara. You can also use it in place of lasagna noodles in a lasagna

probably not - it's already cooked, so I would imagine it probably wouldn't work and would get mushy and gross. You are probably better off slicing it and doing something with it that way. The instant mix kind is a little more versatile. If you happen to purchase it again, I would go with that kind. I find it easier to work with.

Re: polenta
ok so i sliced half the roll and pan fried it and then the other half i mashed up in a saucepan with some milk and parmesan cheese. both ways were delicious! now that i've tried it I'm going to try to make it from scratch bc I'm sure the creamy version from scratch is 100 times better.
