banana bread into muffins ?
I love my banana bread recipe, can I just put the batter into muffin pans? The bread takes 55-60 min in a loaf pan, how much time do I take off? Do I need to reduce the temp?

I think that would work perfectly fine as cupcakes! I'd try 12-18 minutes, being sure to check them often!

I JUST did this last week with banana nut and zucchini bread and made them into muffins. For the banana nut I did mini loaf pans and it took 45 min and the cupcakes took 25-30 min. Much longer then I though because they were denser then normal cupcake batter. They freeze GREAT and we have been enjoying them every morning! I suggest doing a double or triple batch since they do freeze so well. Well I did with the zuchhini since I prefer home grown over store bought zuch.

I do this all the time, and then I freeze them! They defrost perfectly.
