Portobella Mushroom Fajitas?

Has anyone ever made them? I had some portobellas & peppers that needed to get eaten, so I'm making them as we speak. I hope they're good! Chat Icon

I didn't follow a recipe, I just cut up the portobellas like I would steak, red & green peppers & a large Vidalia onion. Cooked mushroom separately (I wasn't sure how long it would take) and cooked rest on high in saute pan. I added the mushrooms, fajita seasoning and a little water (1/4 cup) in with the veggie, and also a can of rinsed & drained black beans. Cooked another minutes or two on high and that's it! It was delicious, DS gobbled it up Chat Icon

I love them.

I make them with spinach and onion.

Get your sautee pan ready with a little butter and a dribble of olive oil. Add a pinch of salt and some butter and then a single minched garlic clove.

Make long slices of mushrooms and throw them in. Toss in some thin slices of onion. Sautee until mushrooms start to soften. Add some baby spinach leaves and stir until it just starts to wilt. Remove from heat.

Take a flour tortilla and sprinkle your grated cheese on the bottom (cheddar, jack, colby a mix.. whatever), then spoon the spinach, onion and mushroom mixture in it. Not too much .. you should leave about a half inch all around. Sprinkle more cheese on top. Put another tortilla on top and then you can either fry it in a skillet with a little butter/oil or non-stick spray like a pancake or put it on a cookie sheet and toss it in the oven for a few minutes until the top and bottom fuse together with the cheese. If you do the oven method I suggest brushing the tortillas with a little melted butter for flavor. cut with a pizza cutter into wedges and serve with salsa or pico and sour cream for dipping.
