What other side would you make with ...
Pork Wellington (yum!) and Green Bean/Mushroom cassarole??
Not sure if I want mashed potatoes, rice or maybe just some orzo...??

I've never had Pork Wellington.. but it sounds great!
If it's anything like Beef Wellington it's pretty heavy.. and green been casserole is also rich.. so I'd probably avoid a thick mashed potato. I think Corn would be a good starch.. maybe a even a corn salad with a bit of cider vinegar and some crisp peppers to brighten the overall dish. I LOVE potatoes with pork too though.. so I might consider some crispy oven baked potato wedges. You could also do egg noodles with a little parsley and a small amount of buerre citron to dress it and lighten it. I admit I don't love rice with pork but I'd even consider a nice rice pilaf with a little lemon to give a little acid and zing.

If you are making a sauce, you can make bread dumplings. It goes great with it. It's like a piece of soft white bread. I love them, but I'm not sure if they are an acquired like though.

I just use regular white bread and cut off the crust.
