Re: Tomato Sauce Recepie
Here's what I'm doing right now (although I tend not to use puree). Take 5 cloves of garlic and cut lengthwise into thirds. Saute this in some olive oil. Do NOT brown the garlic. Then add your tomatos. Salt and add 15 chopped basil leaves. Cook over med low heat for about 20 minutes. Add another 10 chopped basil leaves and stir.

Re: Tomato Sauce Recepie
I love my sauce LOL! I'm super picky and hate chunky sauce. This is a smooth sauce.
3 lg.cans of Tutto Russo tomato sauce (or any brand). 5 cloves of garlic, slivered(sliced very thin) small palm full of dried parsley 1/2 palm full of dried basil 2 bay leaves 1 lg can tomato puree 1 small can of tomato paste salt and pepper 2 tablespoons of olive oil 1/2 cup pecorino romano grated cheese & rind of possible 1 small onion, (peeled, but leave whole) 1/4 cup of sugar
Add oil to sauce pot. Add garlic, DO NOT BURN. heat until a golden brown. Use very low heat. Once soft I mash with a fork so it basically dissapears into the oil.
Add rest of the ingredients, and stir well.
I let my sauce sit on medium heat, mixing frequently for about 5 hours.
When done, remove the whole onion & bay leaves.
The onion is used for flavor, as well as to soak up the acidity of the tomatoes.
