Anyone make Salmon burgers / salmon cakes?
I remember once eating a salmon "burger" and thinking it was ok, not bad.
I'd like to maybe try this out for my toddler and possibly for DH and I.
Anyone have a good recipe that they like? What do you eat them with?
Just trying to branch out in new directions

DS threw a fit at the fish counter a few weeks ago b/c he wanted pink fish not white fish. I wasn't sure how much to get and I wound up getting too much so I took the leftovers and made mini salmon sliders. DS asks for them once a week.
I'm sure it was based on a recipe but now I just eyeball it.
I use cooked salmon (usually marinated from dinner 2 nights ago).
Breadcumbs, small egg (mix in a cup and add what i need - a full egg was too much so I had to add more breadcrumbs and it was bready), a few sprinkles of old bay, zest and juice of one lemon, some fresh basil (i had from the garden - over the winter I'd just use whatever i grabbed). Sometimes I grate in a little onion or a clove of garlic.
I break up the salmon with a fork, mix everything together and fry in shallow oil on the stove.
I know w/ DS he doesn't like somethings by name so if I call it something else he'll eat it (doesn't like scallops but likes fish nuggets).... so maybe tell your DC they are pink burgers or something.

They are a staple in our house, DH loves them!
I take 2 cans (the tuna fish sized cans) of skinless, boneless salmon (we buy the wild salmon cans from costco). I mix it with one beaten egg, a half cup of seasoned breadcrumbs, 1-2 tblspns of dijon mustard and 1-2tblspns of chopped fresh flat leaf parsely. I form the into 4 patties and fry for 4 minutes on each side.
I dont use tartar sauce, instead I mix 1/4 cup mayo, the rind of one lemon and 1-2 tblsnps of the chopped parsley together instead.
I toast challah rolls, add one slice of tomato, the salmon patty, a squirt of fresh lemon juice and the sauce and it is sooo yummy!

I've never made my own, but these recipes sound good. I'll have to try them!
Just thought I'd add that the frozen ones from Costco are also really good!
