Meatloaf muffins...Update - I made them
So, I saw these somewhere (if it was here, thanks for the idea).
You make your meat loaf in a muffin pan, then "frost" with mashed potatoes. I thought it would be cute to use corn and peas as "sprinkles".
Well, someone at work mentioned ketchup as "frosting". I never made meatloaf w/ketchup. Do you just put it on top?
Also, while looking for ketchup sauce/gravy recipes, I saw some bacon wrapped meat loaf recipes.
Do you think I could line the meat loaf with bacon and have it be the "wrapper"?

I've made meatloaf with my mother in laws 'special sauce' usually a cup of ketchup, two tablespoons of guldens mustard and two tablespoons for brown sugar....those are rough estimates...as I just squeeze it all in to taste now and slather it on or just use it on the side.....my hubby loves it, and I am more of a plain meatloaf kind of person....when you cook it on....the brown sugar and sugar in the ketchup caramelize a little and it tastes pretty good.

I put ketchup and bacon on my meatloaf... if I did it in muffin form I would do the same!!!

My mother always puts ketchup in her meatloaf. I would too, but DH doesn't like meatloaf so I just don't make it. But she puts it in the meatloaf and then also on top.

I do the ketchup, mustard, brown sugar mixture on top. So yummy. The bacon sounds delicious but I wonder if it would get crispy at all?
Just wanted to add, I have this brownie bowl pan. It was about $10 at AC Moore. One of my favorite things to do with it is meatloaf and then top them with mashed potatoes. Super cute and delicious.

I mix ketchup with onion a little tomato paste. Then put sliced onions on top

I made these for my kids on April Fool's day. I didn't frost them with ketchup though. I used the mashed potatoes with food coloring.

Thanks for your help everyone.
I will let you know how they turn out.
DS seemed to like the idea. I was thinking of making cake-cupcakes for dessert. This way DS has more incentive to eat his meat loaf cupcake.

I finally made these tonight. I criss-crossed the bacon on the bottom b/c it didn't fit around them nicely.

I used the "special sauce" but I didn't have brown mustard so I used honey mustard and I had the worcestershire sauce out so I added a dash (okay, maybe I didn't use YOUR recipe). It was really good. I'd put that on fries, burgers.
Not really sure what the bacon added but it was fun. DS was happy to eat his meatloaf with bacon so I guess it was worth it. The sauce on top was really good.
DS thought it was SO FUNNY that we had cupcakes for dinner. I put mashed potatoes on top and put some edamame as "sprinkles".
Its a fun way to get DC's to eat meatloaf.

I mix together ketchup, worsh sauce, brown sugar and montreal seasong mix for the top.

I use a bobby flay recipe, and use a mixture of ketchup, balsamic vinegar and red pepper flakes on the top of my meatloaf, it's to die for  I'd eat that by itself!
I love the idea of the mashed potatoes too. I'll have to try this!
