what to do with fresh eggplant, italian peppers and tomatoes
from the garden? im drooling over them in my kitchen right now. im thinking just sauteeing them all together with garlic and olive oil... do i need to do something with the eggplant first? they're very small.

If they are firm, I would microwave the eggplant for just a couple minutes in the microwave...it just gets rid of the firmness.

Make a veggie stew. It do that all the time.
Cut/cube eggplant and pepper. Chop tomatoes
Put EVOO in deep pan. Put garlic, italian herbs, salt, pepper. Sautee the garlic
Add eggplant and pepper and sautee.
Stir until nicely colored.
Add tomato and reduce temp. Adjust seasoning. Simmer until tomatoes are "mushy". Eggplant and pepper are "soft" and cooked through.
The longer it simmers, the more flavor it would have. I would simmer for at least 1 hour. Add water (or broth) if it gets to "dry" and continue cooking.

Thats exactly what I ended up doing amd it was sooooo good! I can't wait to raid my friends garden again

I haven't made it this year, because we didn't get much from our garden, but last year I used to grill eggplant and then serve it with homemade peanut sauce.
So yummy!
I got the idea from here.
