Flaxseed Meal
Does anyone know where I can find this? I looked in Stop & Shop and Best Yet (in the baking aisle & oil aisle). I have no idea what it is or where to get it, but a recipe calls for it.

Not 100% sure but I think S&S has it near the flour. Where they have whole wheat flour and other specialty type stuff.

Thank you so much!! Can I ask what you use it for? I have a recipe for mozzarella sticks that calls for it, but I'd love to know what else I can use it for.

I've bouth it at Trader Joe's. In that store, it's at the end of the bread section. I think it's at the transition between bread and cereal. And I've seen it in the natural food area at Stop and Shop.
I make microwave muffins with it. I've also used it as a breadcrumb alternative (or addition) in meatloaf. I've tried to bread chicken cutlets with it but I did not like that at all. I'd love to see your mozzarella stick recipe. Maybe I was missing something when I tried to use it as breading.

I mix it in with my oatmeal, granola w/ yogurt, muffins, smoothies, pancake mix. enjoy!

The mozzarella stick recipe is from Jessica Seinfeld's Deceptively Delicious. Here it is: 1 cup whole-wheat breadcrumbs 1 tablespoon flaxseed meal 1 tablespoon sesame seeds 1 cup shredded, part-skim mozzarella 1/2 cup cauliflower purée
1 tablespoon cornstarch Nonstick cooking spray 1 tablespoon olive oil 1/4 teaspoon salt
On large sheet of waxed paper or aluminum foil, toss breadcrumbs with flaxseed meal and sesame seeds. In large bowl, stir together mozzarella, cauliflower purée and cornstarch until well combined. Shape into eight 2 x 1/2 inch logs. Gently roll in breadcrumbs, then wrap in aluminum foil or waxed paper and freeze for 20 minutes. Coat a large nonstick skillet with cooking spray and set over medium-high heat. When pan is hot, add oil. Arrange mozzarella sticks in pan in a single layer, being careful not to crowd them. Cook 3 to 4 minutes, turning occasionally, until crumb coating begins to brown. Sprinkle with salt and serve warm. Makes 8 mozzarella sticks.
