Can you freeze uncooked eggplant?
I sliced eggplant (to make eggplant parm) but I don't know if I'll have time to egg,breadcrumb and cook it tonight. Can I freeze it and then cook it when I defrost it?

I would think not because there is too much water in eggplant. Just leave it in the refrigerator in a container and do it tomorrow
