Spicy Baked Chickpeas
OMG, these are so good!!!!!
Spicy Baked Chickpeas
Recipe courtesy Claire Robinson, 2010
Prep Time: 10 min Inactive Prep Time: -- Cook Time: 35 min
Level: Easy
Serves: --
Ingredients
2 (15-ounce) cans chickpeas 2 tablespoons olive oil 1 teaspoon Spanish smoked paprika 1 teaspoon ground cumin Pinch cayenne pepper, or to taste Kosher salt **I also add a t garlic salt and a t chili powder
Directions
Preheat the oven to 400 degrees F.
Rinse and drain the chickpeas and dry by rolling them around in a kitchen towel. Combine the oil, paprika cumin, cayenne and salt in a large bowl. Add chickpeas and toss to coat evenly. Transfer the chickpeas to a parchment-lined baking sheet and spread them out in a single layer. Bake until golden and crispy, 25 to 35 minutes, shaking the tray to toss after 15 minutes. Remove the baking sheet from the oven and transfer the chickpeas to a serving bowl.

The first time I made them exactly as the recipe stated and they were still a *little* chewy on the insides but mostly crunchy. I made them again yesterday but changed it up a little because I was going out. I cooked it as directed but after about 25 minutes, I actually turned off the oven and let them sit in the oven until I got home. They are awsomely crunchy, almost resembling a nut. These are my new favorite snack!!!!
Oh, I almost forgot to mention, before putting them in the bowl, after drying, I take the skins off (they kind of pop off). Also, make sure they are very dry. It will help with the crunchiness
