Re: mashed potatoes
I use a lot of roasted garlic, butter and milk. I think it I smuch them enough they get creamy.
I cut the potatoes all the same size and start in cold water. Other then that, I don't know of any tricks.

Re: mashed potatoes
Pioneer woman's blog has a creamy mashed potatoe recipe that uses milk and cream cheese. My DH wanted to die b/c i asked him to try it. they are delish..but he hates cream cheese so he wont go near it.
i use yukon gold potatoes, cut in quarters, put them in cold water, bring to boil and cook for a good hour. strain, mash, and then i start adding in the butter and milk. takes a few tries to get it the way you like.

I do the same thing. Sometimes I'll throw in a little mayo--hubby got that tip from a restaurant we used to love!

I do the same thing with the mayo! But it's my mom who's been doing that for over 40 years!

This is what DH does, excellent every time.
My Mom puts mayo instead of sour cream.
We've also tried that new Philadelphia Cooking Cream - in the different flavors - EXCELLENT - instead of sour cream.

Re: mashed potatoes
I heat my milk on the stove in a saucepan. If desired, I also add garlic cloves to the milk. Just heat to a low boil. Then add to the mashed potatoes. They come out so creamy and it helps to prevent the potatoes from getting gummy as they cool down.
Got this tip from Alton Brown or Tyler Florence.
