Bored of all my veggie side dishes. Can you please share yours?
I'm on a low carb diet, so no corn or anything breaded, please. Thanks!

cauliflower au gratin
slow cooked green beans (with bacon, onions, chicken stock)
sauteed onions, carrots and spinach
broiled asparagus (DH likes his wrapped in bacon)
grilled eggplant
carrots/cucumbers/celery with hummus
broccoli with EVOO and garlic

My fav is grilled veggies on the bbq..eggplant, squash, zucchini, tomatoes....just a little EVVO and kosher salt. YUM
We eat a lot of swiss chard, but we mix it w potatoes so im guess this is not an option for you.
Other than that its mostly asparagus, spinich or green beans sauteed in a lil oil with bread crumbs on top.

Grilled Zucchini and Bean Salad Recipe courtesy Marcela Valladolid
Prep Time:20 min Cook Time:8 min Level: Easy Serves:4 to 6 servings.
Ingredients 2 tablespoons fresh lime juice, from about 1 lime 2 tablespoons red wine vinegar 1/4 cup olive oil, plus more for brushing Salt and freshly ground black pepper 1/2 cup finely chopped red onion 1/4 cup chopped fresh cilantro (i used a little more than a cup) 2 serrano chiles, stemmed, seeded and finely chopped 2 cloves garlic, minced ( i used 4) 1 (15-ounce) can white kidney beans, rinsed and drained 1 (15-ounce) can red kidney beans, rinsed and drained 3 zucchini, cut lengthwise into 1/2-inch thick slices
Directions Prepare a barbecue or grill pan to medium-high.
In a medium glass bowl, whisk the lime juice, vinegar and oil until slightly thickened. Season with salt and pepper. Add the red onions, cilantro, serrano chiles and garlic and toss gently until the vegetables are coated. Add the beans and stir to combine. Season with salt and pepper.
Brush the zucchinis on both sides with olive oil. Sprinkle with salt and pepper. Grill the zucchini on a lightly oiled grill rack until tender, turning over once, about 4 minutes per side. Cut the zucchini crosswise into 1-inch pieces. Add the zucchini to the bowl with the dressing and beans. Toss to combine and serve.

this is actually one of my favorite things to do. SImple. I also LOVE even more making them a little burnt with Salt and freshly ground pepper in EVOO!
I've been having this dilema too but we've done:
Zucchini with Tastefully Simple Seasoning salt on the grill- YUM
Peppers and onions on the grill in Italian dressing
Chickpea salad
roasted sweet potatoes on the grill
tonight I just cut up fresh garden tomatoes, spread mayo and added S&P on them.
the other night we did diced garden tomatoes, diced mozz., rdiced ed onion, balsamic vinegar & evoo with s&p
TJs also has delicious veggies already marinated and ready to go in freezer section that are delicious.

I love swiss chard and potato mixed together. You boil it together I would do 2 heads of swiss chard to 1 potato. When it is done you add a couple of cloves of garlic and olive oil, salt and pepper to taste and mash it together. So good.
I also like boiled asparagus and make it into a warm salad with just vinegar, olive oil and salt.

I just made this the other day and loved it! The first time I made it, we had no feta so I used Pecorrino Romano cheese. Different taste but it was good.
Spinach and tomatoes with feta cheese
1 1/2 tsp olive oil 3/4 cup(s) onion(s), chopped 2 tsp minced garlic 18 oz spinach, baby leaves 1/4 tsp table salt 1 cup(s) grape tomatoes, cut in half 1/2 cup(s) crumbled feta cheese
Instructions
Heat oil in a large deep pot over medium-high heat. Add onions; cook, stirring often, until light golden and tender, about 7 to 8 minutes.
Add garlic; cook, stirring, until fragrant, about 30 seconds.
Add spinach and salt; cook, tossing, until spinach wilts, about 2 to 4 minutes. Add tomatoes; cook, stirring, until tomatoes soften, about 1 to 2 minutes.
Remove from heat and drain off any extra liquid; stir in feta. Yields about 3/4 cup per serving.
