Need pasta idea/recipes

I realized that DH keeps buying pastas. I have like 20 boxes of pasta (apparently they are major sales that DH cannot pass!Chat Icon )

We eat pasta maybe 1-2 times per month.

Aside the sauteed white wine seafood pasta and the red sauce/italian sauce pasta, what can we do.

We cannot a too big calorie meals, we are still watching our weight.

This recipe is a new favorite in my house. So easy.

From Cooking Light magazine. You can sub any pasta.

Zucchini and Bow Ties from Rachael Ray 365: No Repeats

Coarse Salt
1 pound bow-tie pasta
1/4 cup extra virgin olive oil
6 garlic cloves, minced
2 medium zucchini, cut into matchsticks
Coarse black pepper
1 cup grated Parmigiano-Reggiano
1 cup fresh basil leaves, torn or shredded (20 leaves)

(I added 2 chicken breasts, cooked and diced)

Bring a large pot of water to a boil and salt it. Cook the bow ties al dente, with a bite. Heads up: You will need a couple of ladles of starchy cooking water.

Heat a large, deep skillet over medium heat. Add the EVOO and the garlic. Cook for 2 minutes, then add the zucchini. Cook gently for 8 to 10 minutes. Season with salt and pepper and add a couple of ladles of cooking water. Drain the pasta and add to the zucchini. Toss with the cheese and turn off the heat. Toss for 2 minutes, until the liquids are absorbed. Serve in shallow bowls with lots of shredded basil on top.

Escarole and Beans

Add a little chicken broth to thin out the recipe and then add pasta. I use either small rigatoni or small shells. Sometimes I'll even toss in some grilled chicken. DH loves this!

I have a standby recipe that never fails! And it's super easy!

I saute an onion in some olive oil and then add about 4 cloves of crushed garlic. Then I add chopped zucchini. I sautee all for about 5 mins, then add some white wine and let it reduce. Then I add a can of petite diced tomatoes. I add about 1 tbsp of italian seasoning and salt to taste. Let it cook for about 10 minutes until the tomatoes start to break up. Then I serve it over whatever pasta I have on hand. It's cheap, healthy, and so easy to make! Makes for great leftovers, too!! I also add a chopped red pepper if I have it on hand.

Pasta w/ brocolli & sausage is also a stand by.....brown sausage & remove from pan - sautee a chopped onion & crushed garlic in the sausage drippings (I usually add some olive oil as well). Then add brocolli and sautee for 2 mins. Add white wine and reduce. Then add chicken stock to make the sauce. I use cornstarch and water to thicken the sauce a little and then add sausage back in. Salt to taste and then serve over pasta! YUM...made this last night!

Here's one that I love! Sorry it's written so formally-I just copied and pasted from a recipe column that I write.

Linguini with mushrooms and artichokes

Ingredients

- 16 oz. of linguini

-Italian seasoning

-Minced onion

-Three gloves of garlic

-Garlic salt

-8 ounces of whole white mushrooms

-14 ounces of aritchoke hearts in brine

-Olive oil

-One stick of butter

Directions

You'll need to prepare your mushrooms and artichoke hearts about an hour before you begin the rest of the process. Cut up the mushrooms and artichoke hearts and place them in a ziplock bag. Pour in 1/2 cup of olive oil, one tablespoon of Italian seasoning, one tablespoon of minced onion and one tablespoon of garlic salt.

Seal the bag and shake it until the olive oil and seasonings are distributed around the bag. Place it in the fridge for one hour.

About 50 minutes later, start boiling the water for the pasta. Toss in a few dashes of minced onion and garlic salt to taste. After the water has begun to boil, add in the linguini.

After you put the linguini into the water, place the mushroom and artichoke mixture on the stove top at medium low heat in a frying pan. After five minutes, chop up the three gloves of garlic and add them to mixture. Stir every few minutes or so.

Five minutes before the pasta is done, put one stick of butter into the frying pan with the artichoke and mushroom mixture. Continuously stir so that the butter melts into the mixture and takes on a slight sauce-like texture.

Remove the pasta and the mixture from the heat. After draining the pasta, toss the pasta and the "sauce" together.

I started making this pasta dish, serving grilled chicken cutlets on the side.

Pasta Caprese :
1/4 cup extra virgin olive oil
2 to 4 teaspoons lemon juice
1 teaspoon sugar
1 garlic clove minced
1 shallot minced
1-1/2 pounds ripe tomatoes
12 ounces fresh mozzarella or Polly-O *
1 pound penne or fusilli pasta
1/4 cup chopped fresh basil

Whisk oil, 2 teaspoon lemon juice, garlic, shallot, 1/2 teaspoon salt, 1/4 teaspoon pepper together in a bowl. Add tomatoes and marinate no longer than 45 minutes.

*If using fresh mozzarella, add to tomato mixture and marinate.
If using Polly-O, cube mozzarella and freeze for about 10 minutes to firm up before adding to hot pasta and tomato mixture, otherwise it will melt and clump together.

Cook pasta according to directions and drain well.

Add hot pasta to tomato mixture and gently toss. Let stand 5 minutes then add basil and adjust seasonings with salt, pepper and lemon juice.

It's supposed to be served hot, but it was pretty good slightly warmed the next day.
I am going to double the marinade amount and add other vegetables, like diced red onion, peppers and blanched zucchini to the dish. That's about all the veggies that DH will eat.

Just a note: tell your husband to stop buying so much pasta in the summer. The reason the stores have big sales like this is that past goes bad easier during the summer, so they try and move their stock out more. Chat Icon
