My cousin came up with the idea of zucchini enchiladas! I tried them tonight- sooo good, and pretty easy!!
Take one onion and a zucchini ( or 2, if they're small- you want about 2-3 cups once they're shredded). Put them in the food processor to shred them all up. Then, sautee them in a frying pan for a few minutes, to soften them and get some of the liquid out. Stuff the mixture into 12 small tortillas, and place them in a 9/13 baking dish. Put some shredded cheddar cheese and a can of enchilada sauce over top of them. I also added a jar of salsa verde because I like stuff a little spicy. Bake them at 375 for about 20-25 minutes. Yummy!!
Just figured I would share since I know a lot of people with veggie gardens get over run with zucchinis in the summer lol
