I love chorizo. Do you just grill it alone or doing anything with it? (I never cooked it by myself)

it depends on what I am doing with it. but the easiest way to do it is slice it fairly thin and fry it (I just let it cook in its own fat, very little to NO olive oil) I see it with eggs and beans or with a nice spanish cheese like manchego and bread.
to make the above rice, I cut the chorizo in small pieces and fry in a bit of oil in my rice pot, then add chopped onions and bell peppers and sautee. I add my rice after a few minutes and stir to coat as many of the grains as possible. then I add my water (boiling water, 2 parts boiling water to one part rice) add salt and stir. cover and cook on low until rice is cooked through.
so easy and YUM.
ETA: if you can find it, the D'Artagnan brand is worth the price.
