Re: how do you make pesto?

It's super easy! I make ours in the Cuisinart Mini Prep and mix it with penne:

2 cups fresh basil
1/4 cup toasted pine nuts
1 clove garlic
salt and pepper to taste
About 2/3 cup extra virgin olive oil
1/2 cup grated parmesean

Just toast the pine nuts, combine everything but the olive oil, and then combine the olive oil slowly. I think 2/3 cup was too much olive oil the first time we made it, so we eyeball it instead of measuring it out and pour it in slowly to make sure it doesn't get too oily.

Re: how do you make pesto?

bunch of basil (1 pkg)
few cloves garlic
pecorino romano cheese
EVOO
black pepper

throw everything but EVOO in food processor or blender to chop up, then stream in EVOO until you get the consistency you like.

I don't use nuts cause DH and Dad have diverticulosis... but you can add pine nuts or walnuts. Also, lately i have been throwing in frozen chopped spinach also for extra nutrition!

Re: how do you make pesto?

I put the following into a blender or food processor:

about 3 cups of fresh basil
4 cloves of garlic
handful of pine nuts
pinch of salt
1/2 cup evoo

Blend that together, sometimes adding a bit more evoo if its not moving. Then I mix in about 1/2 cup of parmesan cheese. Very easy.

A little more garlic and basil, a little less cheese and this is mine too!
