Re: Beer can chicken
Isn't that when you put a beer can in the cavity of the chicken? I heard of it but never made it.

Re: Beer can chicken
I just saw three of us are making it this week!
I just use granulated garlic, salt, pepper and poultry seasoning. I drop fresh thyme and fresh rosemary in the can before.. er.. inserting it. I do loosen the skin and rub it with the seasonings I mentioned and a little butter.. I always use a little tin pan in case the chicken tips over and to protect from flare ups.

Re: Beer can chicken
Saw that too! Great minds!
I use a homemade spice rub that I make in bulk. It has garlic powder, onion powder, chili powder, Kosher salt/pepper and lots of paprika. I squeeze some lemon juice in with the beer. I rub the spice mix under the skin also.
ETA I do it on the grill. Never made it in the oven, although I've seen that people do it.

I'm doing it on the grill too. I'm weirdly nervous about it, I've never made one before.
When you guys say you add things in with the beer, you literally add lemon juice/thyme INTO the beer can, right?

Yes, right into the beer can. Make sure its just half full of beer otherwise it will boil over. You can use any kind of beer, I use whatever we have in the house. You can even use wine if you want.

Re: Beer can chicken
i add the herbs and butter right to the beer can. You can use any beer really. If I'm not planning on buying a 12 pack I just get a single tall boy of Bud.. otherwise I get a 12 pack (or more) or Heineken and use that.
The first time I made it was not good.. I didn't use a pan and the chicken tipped over onto the grates and the fire flared and my chicken was charred on one side and half the beer spilled. It still tasted good though! Now I use a thin tin pan to hold the chicken and only half a can of beer. I have had a few tipping incidents but nothing terrible.
