Need an easy recipe to take to a girls night get-together

I'm getting together tomorrow after work with some girlfriends for dinner at one of the girls house. Everyone is bringing something. Drinks, dessert, apps, and the main course (chicken) have already been claimed. I need a relatively simple (or at least something that can be prepared the night before) recipe for either a pasta dish or a side dish to bring with me. I was thinking penne marinara with fresh mozzerella (I dont have a recipe tho) but I'm open to any suggestions.

How about a cold pasta salad.

Box of pasta-we like bowties or orchiette

different types of veggies-I usually do carrots, peas, green, red and yellow peppers

A meat or cheese if you like

We use Bobby Flay's basil vinagrette...awesome!

Basil Vinaigrette:
1/2 cup fresh basil leaves
1/4 cup white wine vinegar
1 tablespoon honey
Salt and freshly ground pepper
1/2 cup olive oil

Blend in a food processor

I love pasta salad with pesto, roasted tomatoes and fresh mozzarella.

I would have loved to but we have girls bringing wine and margharitas already and not enough food for everyone.

Here's an app I usually bring...it's easy and delicious!

2 8oz pks of Philiadelphia Cream Cheese (i usually get the 1/3 less fat)

1 jar of Raspberry Chipolte Sauce - I buy this one at Waldbaum's, you'll find it in the salad dressing aisle.

1 (or 2) packages of Emerald Candied pecans or walnuts

Spread out cream cheese in a shallow dish.

Pour candied nuts over cream cheese (reserving some to sprinkle on top)

Pour sauce over cream cheese and nuts. Then sprinkle some more nuts on top.

It looks like a hot mess...but it's so damn good.

You could also just use 1 package of cream cheese, but I usually use two, because I llike to make a lot. But if you use a smaller dish, one will be enough.

halved or whole bocconcini
pesto


just mix them all together and it's a really light, simple caprese pasta side dish. i like to get pesto from my italian shop if i'm not making my own! you can also julienne some basil leaves if you want to make it look a little nicer & season with salt and pepper as needed. you can mix the pesto on right before you go, otherwise you can add a little EVOO before serving

just mix them all together and it's a really light, simple caprese pasta side dish. i like to get pesto from my italian shop if i'm not making my own! you can also julienne some basil leaves if you want to make it look a little nicer & season with salt and pepper as needed. you can mix the pesto on right before you go, otherwise you can add a little EVOO before serving



This is perfect. I just ran out to the italian market by me to grab the ingrediants. I was thinking of adding fresh mozzerella - yay or nay?

Easy salad:

Buy

Gorgonzola crumbles
Craisins
Walnuts
A bottle of raspberry vinaigrette dressing


Just bring the gorgonzola and dressing in their separate containers and toss together when you arrive


Red onions are good with this too but why go crazy
