easy camping foods

i'm going camping and white water rafting for the first time this weekend with a bunch of girlfriends. i dont eat meat and don't know what kind of food i should bring that is camp fire friendly besides veggie burgers.

any suggestions?

Make chili ahead of time. Store in ziplock bag. Cook in pot over campfire. You can even make the rice ahead of time and just stir it in, it will heat up from the hot chili.

Portobello 'burgers'. Avocado, roasted peppers, cheese. Yum.

I'm vegetarian, and when I go camping, I like to cut up a bunch of veggies (zucchini, peppers, broccoli, carrots...anything works, really), place them into a foil pouch, drizzle with olive oil and throw in some spices. I toss it on the grill for about 8-10 minutes, turning it halfway through. I boil Minute Rice in a pot of water to go with the veggies.

Veggie kabobs are great, too, but just as much work as the foil pouch method, which imo tastes better :)

You could wrap a potato in foil and bake it on the grill...do corn on the cob...portabello caps marinated in balsamic vinegar and a little olive oil...slice eggplant, brush with oil, and grill (eggplant takes a little longer than most veggies on a grill, just a heads-up)

I do that kind of cooking when I'm doing a more 'typical campground' camping.

For a more 'roughing it' type of camping, veggie burgers and soy dogs are the way to go. They're just easy.
