Recipe for summer flounder
A coworker gave me fresh fish that he caught yesterday. I want to cook it but am looking for a good recipe. Anything you can recommend?

Re: Recipe for summer flounder
You can make a sole meunier with flounder. It's rich but really delicious and super easy.
I really like Anne Burrell's Recipe
You could also do my mom's favorite fish. Squeeze a little lemon on the fish, season with salt and pepper and then roll up each filet. Coat a pan with a little bit of olive oil and put the fish in add some butter and a little white wine and cover the pan. It takes only a few minutes to steam. When fish is opaque you can remove the cover and put the fish on a plate. Whisk in a little flour to thicken the sauce. This is a sauce - not a gravy so it should not be very thick. Turn off the heat, stir in a little lemon and parsley.. then season with s&p to taste. Pour the sauce over the fish and serve.
You can also wrap the filets in foil - season with s&p or powdered adobo seasoning - and put some thinly sliced summer squash, grape tomatoes, onion and a little lime juice in there and throw the packets on the grill.
