Please settle this for me...."Best by.." dates...
If something like sour cream has a " best by" date of 7/20/11 and you open the container on 7/3/11....
Can you continue to use it until 7/20 or do you have to throw it out after "x" many days (after opening)...?

See, I disagree with that for certain things (like the sour cream in the example). Dairy things, to me, still have a "fresh" window...I would never use milk that had been opened for 1-2 weeks, same with sour cream in your example.
But ketchup, bread, etc...I guess I mostly go by the sell-by date, regardless of how long it had been open, as long as it's still fresh.

Yes you can still use it if it smells good. Im using milk right now that exp 6/30. I opened it about 2 weeks ago. Nothing wrong with it.

Same here, if it's not used up by the best by date, then i throw it out.

If it is opened, I throw it out on the best by date or before. Because things can be dated far in the future, but once you open it, it usually has a much shorter lifespan. I judge by colors, smells and other things if I am unsure or want to try and keep an ingredient going.
