Stacked Fondant Cake

How hard is this to do? I want to do a three tier stacked cake covered in fondant. The isntructions on wilton don't seem hard, but one thing I am conufsed on is do you cover with fondant after stacking them? DO you cover it with one big piece or three pieces?

Any tips on how to work with it and do you make your own or just buy the stuff they sell at the store?

Never made my own fondant, but just started working with store bought fondant and I have to say it was really easy. You frost and stack the layers like you normally would (even frost the outside- it helps the fondant stick and it tastes better) and then roll out the fondant and cover the stack. The hardest part is getting it smooth! Don't forget when you're rolling it out to make sure you have enough confectioner's sugar on your wax paper so it doesn't stick and break apart!

You would roll out one piece to lay over the entire three levels?

Also - how do you color the fondant? I want red white and black and the red only seems to come in a multicolor pack with 4 different colors.

Yupp, one big sheet of fondant or it won't be smooth.

You can definitely buy red fondant alone. Surprisingly, we picked up fondant from Party City this weekend and it came in tubs of each color. Looks like this.

I actually liked it a little better since it's buttercream flavored, too.

Just some advice, I tried the wilton and didnt realize how hard it was to work with until I made my own. And to be honest, the wilton really doesnt taste very good. I have started using marshmallow fondant which I make myself and it is so easy and easy to work with (and it tastes better). I found this recipe online but a word of advice, keep mixing in the powdered sugar until it isnt very tacky anymore, otherwise it takes FOREVER to get off your hands. I have found that I end up using more powdered sugar than they call for.

Definitely frost your cake as flat as you can, this will help your fondant be more smooth. You will want to put it in the fridge to harden the frosting before you put the fondant on- it is easier to work with then. Good Luck, post pics when your done :)

Don't stack the cake before you cover it in fondant. It's much easier to cover them separately and then stack them.
Just insert dowels into the center of the two lower tiers so they have some stability.
It's not difficult, but it does take patience and practice.
Wilton gives great advice for stacking the cakes.

I prefer working with Wilton fondant, personally. It doesn't tear as easily as other brands, or homemade fondant. Very easy to work with. It doesn't taste like much...but most people don't eat it anyway.

I actually decided to do the middle tier in red and the other two white so I will put the fondant on before I stack them and then decorate where they meet so as to not seem the seams.

What is gum paste? I see those sheets that they sell, you would put that over the fondant?

Gum paste is similar to fondant in that it's moldable....but it dries out quicker and harder than fondant. I find it difficult to work with, so I mostly use fondant.
The fondant/gumpaste sheets are good for cutting things out for decorations.
If you want to attach fondant decorations to fondant, all you have to do it use a little bit of water.

Definitely, it's really easy. All you do is buy the mini marshmallows, melt them in the microwave with a little water and then just mix in powdered sugar. It takes like 5-10 minutes tops but like I said, get it to a working consistency in the bowl before you work with it in your hands. The first time I did it the recipe I used said to pretty much dive right in with the marshmallows all melted but cover your hands with shortening. Let me tell you- this was a disaster and it took forever to get it into a working order. I just mix it really well in the bowl now.
