Pasta Salad Recipe
Can someone recommend a recipe for pasta salad? I have a pot luck dinner and I was assigned pasta salad.

I have two i love very simple n light
Wacky macky, blk olives , green olives, marinated artichoke hearts , feta , n i use the oil from the hearts jars n red wine vinegar mix all to gather n chill
Or
Orzo cook n lay on a baking sheet lined with tin foil, take artichoke hearts chop them up pour he reserved oil in the jar to pour over the orzo so it don't stick, put in a bowl, add feta, chopped kalimata olives, n some fresh lemon juice .

I like to use garden veggie (tri-color) rotini (I think it's ronzoni) with tomato, mozzarella, and fresh basil. You could add black olive if you like. I toss with a homemade balsamic vinaigrette. So yummy

I always get requests for this one!
tricolor rotini cubed hard sopressata cubed provolone bocconcini black olives garbanzo beans halved cherry tomatoes
and for the dressing: 1/4 cup red wine vingear 1.5 tbsp lemon juice .5 tsp honey 1 tsp. kosher salt 1/2 cup olive oil
SO GOOD! I like to mix it with 1/2 the dressing and leave it overnight, then mix the rest of the dressing (as much as desired) right before serving

My favorite to bring out is Cheese Tortellini, small cubes of cheddar, diced peppers, broccoli florets and basil vinaigrette (olive oil, a little balsamic, a little red wine vinegar, lots of basil, fresh garlic, s&p into your food prep and whipped into a delicious green frenzy. Toss over warm tortellini and cold cheese and veg. DELICIOUS.

I mix pasta with Ina Garten's Green Goddess dressing. Then add some sundried or grape tomatoes. So good!

I never rinse the pasta! You lose that delicious starchyness that makes pasta so delicious! It also doesn't allow the sauce/dressing to stick as well to the pasta.
Pasta water is the GREATEST! You don't want to lose it! I always add it to my pasta sauces (not for salads, but for hot pastas!)

I make one that is SO easy and boring lol but everyone LOVES it...
Tri-color rotini Feta cheese (& a lot of it ) Black olives Bell peppers Chick peas (optional)
Dressing: Good Seasons Italian with EVOO and red wine vinegar

I was going to say the same EXACT thing. Great minds! I also use the pasta water for brown gravy when I make roast with noodles. Potato water is good for gravy too!

When it comes to cold pasta salads, you are actually supposed to rinse off the starch because it becomes too sticky especially when taking it right out of the fridge to eat very cold, and the dressing actually clings better to the pasta itself if it is not sticky.
Of course, you'd otherwise never rinse pasta, and many times reserve the cooking water to add to the final dish to bring everything together.

See.. this is why I really like this board. I always learn new stuff! I never heard of this! I've never had a problem with sticky pasta or with my dressing not sticking.. but if I do I will know how to rectify it!
Try it next time with just a little bit! Then you can see which you like!

I buy the suddenly salad pasta salad and then jazz it up. I add olives, artichoke heart, red peppers, mushrooms and then slice up a few cheese sticks and grape tomatoes.

I have a super-easy recipe. I use tri-color rotini mixed with tri-color fioretti (little flowers, made by Barilla). Once the pasta is ready, I put Birds Eye frozen broccoli, cauliflower & carrots in the bottom of the colander and dump the hot water and pasta over it. Put it in a large bowl and mix in Ken's Light Italian Dressing. I always get compliments on it, and it's so easy!

If you like artichokes - I really like Sunny Anderson's pasta salad:
2 (14-ounce) cans quartered artichoke hearts, drained 1/2 pound bowtie pasta, cooked and drained 1/2 cup, pitted and sliced black olives 4 sun-dried tomatoes, julienned 1 small red onion, chopped 1 garlic clove, minced 1 tablespoon lemon juice 1 tablespoon red wine vinegar 2 tablespoons olive oil 1/4 cup freshly chopped parsley leaves Salt and freshly ground black pepper
Toss all ingredients in a serving bowl and let rest, covered, in the refrigerator for at least 1 hour before serving.
