Crepes???

Are they hard to make? Dh as just informed me this morning he would like these for fathers day!

I need the easiest recipe you have.

I don't have a recipe bc I do it the way my grandmother does..but when u do a search do one that has seltzer/club soda as an ingredient. This is the secret my grandmother taught me and it makes the best and lightest crepes ever!!

I searched you tube for instructions & I think I want to try the crepe batter recipe from peter vamos
& the cocoa filling recipe from hungarian gourmet

they ARE difficult if you want to make a real one in that they require finese.

it's not like an american pancake. the batter is particular, they are UBER thin. you really need to spread them out.

my french mother (I adopted her Chat Icon) makes the most deliciously thin and perfect crepe.

you should look for a crepe pan. she got hers in target. and work on spreading the batter as thin as possible along the bottom.

I will try to get her recipe. I think she using Jacques Pepin's though. I KNOW she is very liberal with the Gran Marnier in it. Chat Icon

ETA: there are two types of crepe recipes too, one for savory and one for sweet. let me know which you want!!!

If you do not have a crepe pan (I dont) and you are a novice (I am) then you can follow what I do:

I put in two cups of flour
Add an egg
Add a "splash" of vanilla
Then I add enough milk to make the batter thin

Heat a large frying pan. Drizzle some vegetable oil. Heat that for a second or two. Then I spread it around with a paper towel.

Now pour in some batter. Your goal is to pour and then tilt the pan "all ways" so that the batter reaches the edges of the pan in a very thin layer. If you pour too little, it wont reach the edges and you wont have a circle (these I eat anyway). If you pour too much, it will reach the ends but will be too thick (these I eat anyway). Once the crepe has a chance to set a little start shaking the pan back and forth. Once it releases, you can flip it over. You're looking for a pretty golden color on both sides.

My preferred filling is to rub butter onto the top of the crepe. Down the diameter I sprinkle a line of sugar. Then I squeeze lemon juice on top of that. Roll and eatChat Icon

I made these for breakfast one morning with sliced strawberries, cool whip and a little chocolate syrup. Dh and my kids loved them! So good and pretty easy.

I make these all the time. I love that you make the batter ahead but you can also make the crepes ahead. i have made them up to a week in advance. When it comes time to eat them just warm them on the skillet for 30 seconds each side. They wil taste like you just made them. This recipe is great and pretty much idiot proof lol I had a lot of failed attempts before trying this recipe Chat Icon

When I was pregnant I used to crave them all the time. I ended up buying the ready made shell, and fill with nutella. It was good.

Thank you! I'm looking at how easy everyone else says they are and getting sad because I'm convinced I just am a sh*tty crepe maker!Chat Icon

To ME they are challenging. I have to use a wide flat and shallow pan and I take extra care with the batter (using seltzer or beer - and warming the milk).

I fill with Nutella and banana (since having it at the Chop Shop) with a side of ice cream. I also love it with strawberries and a sweetened cream cheese mix or just stuffed with brandied fruit and spiced cream. For savory crepes I like shredded chicken with mushrooms or eggs with maple bacon.

BUT.. they are SOOO worth it. I'd definitely do a few trial runs. Good luck!Chat Icon

I make crepes constantly. DS loves them with berry sauce (heated and mashed berries)

My simple go to recipe is:

1 cup flour
1 cup milk
2 tbsp butter
2 eggs
a dash of vanilla
add water to desire consistency (thin)

As previous posters said pour a puddle in the middle and work the pan around in a circle until it is spread thin reaching all edges. They cook pretty quickly, flip and wait a few seconds and they are done!!

You can add anything to them, jelly, syrup, sugar, etc. I like to make a berry mixture on the stove, I heat mixed berries up with a little sugar and some lemon juice and then mash them a bit. Spread the mixture down the middle of a crepe in a line and roll. Sprinkle confectionery sugar on top and you are done!

That is KEY! It must rest for 1 hour in the fridge before using.

Your batter cannot be lumpy either. Must be extremelly smoothe.

I make them on a regular basis. Well on snow days last Winter. So A LOT last Winter!!!!

You HAVE to reapply oil between crepes. Oil a thick paper towel rolled in a ball to wipe pan so you don't burn yourself.

The best pan is a crepe pan of course of any pan that has the smaller/flatest sides.

I usually use 3/4 of a soup/sauce scooper thingy for dosage.

Spread on center and swirl pan around QUICKLY.

Takes only minutes on each side.

You need a very hot burner.

Have a side plate by oven to take crepes out.

Sugar that crepe right away. It absorbs the sugar right away.

I find that a lot of recipe dosage are "off". I have used some of my mom's recipe (she put egg whites in it... it's called Lace Crepes) and other recipes and I made my own that I like best.

i saw some post about czech or hungarian pancakes...I'll add on with german pancakes.

DH makes them all the time and if he can - anyone can. He uses my mom's recipe which is jsut 6 eggs, 1 cup milk, 1 cup flour. (I will double check, but i think that's it.)
