Salmon...recipes please...and salmon burgers

Apparently, this is DS's new favorite.

Anyone have any recipes?

He INSISTED on "pink fish" for dinner tonight. We have some leftovers so I was thinking of making a salmon burger. Does anyone have burger (or regular) recipes they care to share?

TIA!

Salmon, wrapped in foil, on the grill is REALLY good and easy

YOu can add any type of marinade (Ive heard teriyaki is good on salmon). I love plain salmon too though

I make a rub for my salmon. It is delicious!!

1tsp brown sugar
1/2 tsp coarse salt
1/2 tsp paprika
1/2 tsp dried minced onion
1/2 tsp fennel seed
1/4 tsp garlic powder

rub on salmon and then drizzle with honey before broiling.

I use this recipe with minced salmon (I replace the crab with salmon).

I make a glaze (to taste) of
dijion mustard
honey
brown sugar
lemon juice

I put the glaze on the salmon and bake it for 20-25 minutes at 350.

I made these salmon burgers last night and they were really good.

I used fresh basil and oregano, and grated the lemon zest and the onion.

I'm not sure if the onion made it too watery, I needed more breadcrumbs to hold them together.

I made them slider sized since I didn't have enough for dinner - they were just a test. DS ate his whole salmon burger and didn't touch his hamburger Chat Icon

================================

Yummy Lemon Salmon Burgers
1 (16 ounce) can salmon, drained and
flaked
2 eggs
1/4 cup chopped fresh parsley
2 tablespoons finely chopped onion
1/4 cup Italian seasoned dry bread
crumbs
2 tablespoons lemon juice
1/2 teaspoon dried basil
1 pinch red pepper flakes
1 tablespoon vegetable oil

2 tablespoons light mayonnaise
1 tablespoon lemon juice
1 pinch dried basil

In a medium bowl, mix together the salmon, eggs, parsley, onion, breadcrumbs, 2 tablespoons of lemon juice, 1/2 teaspoon of basil, and red pepper flakes. Form into 6 firmly packed patties, about 1/2 inch thick.

Heat the oil in a large skillet over medium heat. When the oil is hot, add the patties, and cook for 4 minutes per side, or until nicely browned.
