Cooking with wine
I have been using red wine in casseroles, chili and spaghetti bolognase, but I am trying to cut down on my grocery costs, and I was wondering what I could substitute for red wine in these recipes. I used chicken stock, but it was too salty.
Does anyone have any ideas? Can I use white or rose wine the same way that I cook with red wine? I have two wine boxes that we got as gifts that I would like to use!
Thanks for any advice you can give me!

you can use a white or a rose but the backround flavors will be different. it won't feel as rich. more light I think.
I would just leave wine out though. it's not a requirement in any of those dishes. it's just a flavor enhancer.
make some scampi with your white instead.
or, I make a nice chicken stew with shallots, white wine, stock, and veg.

I'd try a low sodium Beef Broth...
Or sometimes I'll buy the dried porchini mushrooms - reconstitute them in boiling water (let them sit for 15/20 minutes) and use the broth of the mushrooms for extra flavor.

I often have to substitute wine/alcohol in my recipes. For white wine or recipes where I need to deglaze a pan, ginger ale works beautifully (don't laugh)! For red wine, I use either apple or grape juice.
