any good bean recipes?
besides chili...does anyone have any creative bean recipes?? specifically cannenilli bean??

I LOVE this recipe!!
Escarole and cannellini beans
(I serve it over pasta)
Ingredients: 3 tablespoons olive oil, divided 2 large heads escarole salt and pepper to taste 1/4 teaspoon crushed red pepper flakes 1 clove garlic, minced 2 (16 ounce) cans cannellini beans, undrained 3 sprigs fresh parsley, chopped
Directions: 1. Heat 2 tablespoons olive oil in a large skillet over medium heat. Toss in escarole, turning to coat with oil. Season with salt, pepper, and crushed red pepper flakes. Cook, stirring occasionally, about 10 minutes, or until tender. 2. In a separate skillet, heat remaining 1 tablespoon olive oil over medium heat. Stir in garlic. Pour in beans with juices, and simmer until creamy, about 10 minutes. Stir in escarole and parsley; simmer 10 minutes more.

I made nacho's for dinner last night w/ ground beef. I was going to make smushed black beans but added too much water - so it was soupy. I mixed it in w/ meat and DS didn't even know it was there... not so much a recipe as a way of sneaking more into other foods

this sounds great. although i dont think ive ever eat escarole. what would you compare it to? can i replace it with spinach?

My mom made it with spinach once...it was good, just had a different taste than escarole.

I usually make the escarole too, but the other night I made it with broc rabe and DH was lovin it!
I cut the broc rabe and boiled it in salted water for about 4 min. Then I removed it to a bowl of ice water and drained the rest of the water from the pot. Then I added 3 T of EVOO to the pot and 2 big gloves of minced garlic. Once the garlic was fragrant I added a can of white beans. I let that simmer for about 8 min, then I added the broc rabe. I gently mixed it together and let it cook together for 5 more min. I think I added some S&P, red pepper flakes and parm chz.
We ate this along side chicken cutlets and I was shocked how much DH loved it.

We eat a lot of beans...we like chick pea curry a lot! We also eat different lentil dishes often too! I usually search the foodnetwork for new recipes.

I like 3 bean salad. Here is one recipe
1 15-oz can cannellini beans, rinsed and drained 1 15-oz can kidney beans, rinsed and drained 1 15-oz can garbanzo beans, rinsed and drained 2 celery stalks, chopped fine 1/2 red onion, chopped fine 1 cup fresh, finely chopped flat-leaf parsley 1 Tbsp fresh finely chopped rosemary 1/3 cup apple cider vinegar 1/3 cup granulated sugar 1/4 cup olive oil 1 1/2 teaspoons salt 1/4 teaspoon black pepper
Mix it all together

Hanks for all the suggestions ladies! I modified lisa's recipe slightly. Here's what I did:
Sautee 1 onion chopped and 3 cloves of garlic chopped in 1 tbsp of evoo. Add one can of cannenelli beans undrained and simmer for 10 min. In another pan I sauteed spinach with another tbsp of evoo. I used frozen chopped spinach bc I had it on hand. Next time I would use fresh spinach. I added the spinach to the beans and let simmer a little longer and added 1/2 packet of goya sazon. I had this with a 1/2 cup of whole grain pasta and a side salad with tomatoes and balsamic. It was delish and filling!
