hmmm...I would think a regular fried chicken cutlet dipped in buffalo sauce......and buffalo sauce is so easy to make....just melt butter & add hot sauce, that's it! I also add a little honey to balance out the heat.

I'd go with the butter/hot sauce marinade and if you wanted a crunch - maybe a buffalo potatoe chip ground up?

I use a Body for Life version.
ngredients
2 tsp. Hungarian Paprika 2 tsp chili powder 4 chicken breast (about 1 lb) 1 Tbs. olive oil 1/2 c. hot pepper sauce 3/4 cut fat-free sour cream 2 green onions, sliced 1 oz. blue cheese, crumbled 4 whole-grain buns, split 8 celery stalks, cut into sticks 6 carrots, peeled & cut into sticks
Directions 1. In bowl combine paprika & chili powder. Sprinkle over chicken breasts 2. Lightly coat a lg. skillet w/cooking spray & place on med. heat. Place chicken breasts in skillet; cook for 6 min. Turn & cook until no longer pink in center. 3. Place in lg. saucepan over low heat. Add olive oil & heat for 1 min. stir in hot pepper sauce. 4. When chicken is done remove from skillet, place in saucepan & coat evenly with hot pepper sauce mixture. 5. In sm. mixing bowl combine sour cream, green onion & blue cheese. 6. Place a bun on each of 4 plates, top with lettuce & portion size chicken breast.
I made homemade bleu cheese to serve on it. It's healthy and pretty damn delicious.

ive marinated chicken in buffalo sauce (franks brand) and then tossed them on the BBQ and they retain the buffalo flavor

Ditto. Or, sometimes DH w/melt butter in Frank's Hot Sauce and then brush it on the chicken while it's on the grill, instead of BBQ sauce.
