What to make with rice noodles
I bought a box of rice noodles a while back and haven't opened it yet. Can anyone share an easy recipe that I can make with rice noodles?

I have Celiac Disease and I am on a gluten free diet. I can only eat rice or corn pasta. To be honest they do not have the greatest taste. I use them as I would any pasta. I make alot of mac and cheese to hide the taste and texture.

I serve them with red Thai chicken curry, Thai peanut sauce and Chinese style stir fries. I really like them mixed with sauces.

I make fresh peanut sauce with it. I add asparagus to the pasta water with the last 5 minutes. After I drain I add the peanut sauce. Delish!

If you can find an easy Pad Thai recipe, go for it. Thats like my favorite dish in the whole wide world ever.
