if you love mushrooms...

how do you prepare them?

they ALWAYS give me a headache after I eat them. No idea why, but they are so darn tasty.

i usually make stuffed mushrooms.
i stuff them with the stems, breadcrumbs, salt, pepper, olive oil, peppers and cheese.
comes out so yummy!

i have mushrooms ,zuchini and squash everynight as my side dish since im on ww. i sautee them all in a frying pan with a lil olive oil and sprinkle with garlic & onion powder, and a dash of salt & pepper.

That sounds SO good, and I am not even on WW. The problem is that if I ate that my husband wold probably have to leave the table in order to stop gaging, because this dish combines some of his most hated food. Chat Icon Chat Icon

I love grilled portobello. I marinate them in olive oil, vinegar, lots of garlic, basil and some salt - and then grill them. You can really marinate them in just about anything!

I also like to do baby bella mushrooms sauteed with onions, a little butter and some worcestershire sauce.

grill them
sautee with EVOO, garlic powder, pepper
sautee with onions
stuffed
grilled portobellas will melted mozz and roasted peppers

'my new fav is portobella's stuffed with spinach and lowfat italian cheese, garlic, pepper. I brush them with evoo, s/p before stuffing, mix the stuffing and bake them... SOOOOOO good!!!!

my favorite is satueed in evoo with salt and pepper. yum!! also love stuffed mushrooms, protobello marinated in balsamic vinegar and grilled, mushroom omlettes with cheddar cheese.Chat Icon

Ingredients
2 tb unsalted butter
1 pound mushrooms (any kind), cleaned, trimmed, and cut into quarters or sixths, depending on their size
1 small garlic clove, minced
2 tb thinly sliced fresh chives
1/2 c sour cream
3 tb chopped fresh parsley
Salt and freshly ground pepper
3/4 c grated cheese



Method – the procedure
Melt the butter in a large heavy skillet over medium heat. Add the mushrooms and sauté, stirring, until most of the liquid they release has evaporated and the mushrooms are nicely browned, about 10 minutes. Stir in the chives and remove from the heat.
Preheat the oven to 425 degrees F.
Stir in the sour cream and parsley and season to taste with salt and pepper. Divide the mushrooms among 4 or 5 ovenproof ramekins placed on a baking sheet. Sprinkle the top of each one liberally with the Gruyère cheese.

Bake until bubbly and the tops are well browned, about 15 minutes. Serve immediately.



Sometimes instead of chives I'll put scallions in, great flavor too!!!
