Lentils
Please give me any and all ideas for lentils! I've only made lentil soup, and I'm not sure what else I can do with them. TIA!
ETA: If anyone has a great recipe for lentil soup, I'll take that too!

What kind of lentils do you mean? I use the little split red ones for curries, soups, things like that. I like the little black puy lentils for making salads or side dishes along the lines of a rice dish. The bbc has a great site, BBC good food, there are a ton o good dishes for veggies there.

My Lentil Soup
5 carrots (diced) 3 ribs celery (diced) 1 small onion (diced) 2 Tbs olive oil bacon (I dont measure - I just cut the whole side off the bacon at the first bump - turns out to be the right size and I dont have to chop the bacon) bag of lentils (cleaned and picked over) 6 cups of water
In large soup pot heat the olive oil. Cook bacon in heated olive oil until fat is rendered and crispy. Add the diced veggies and cook until a little soft. Add the bag of lentils with 6 cups water. Cook for ab out 45 minutes. I then use my imersion blender and puree some of the soup. it makes it thick. I also stir in some cooked elbow pasta and then when I serve I drizzle some olive oil over and sprinkle with grated cheese.
I love this soup because it is so easy and is a nice hearty meal.

I get the bag of Goya green lentils, put them in a big pot and fill the pot with about two times the water to lentils. I season with salt, pepper, and onion powder. I let it cook for about 45 minutes to an hour. Towards the end, once I start see they're done, I mix two tablespoons of flour with half a cup of cold water and add it to the lentils to thicken them, turning up the heat for two minutes. Then I take about three or four ladles full and pour it over pasta. I can usually get about two more meals like this out of this batch. I just split up the rest and freeze it.
This was one of my great-grandmother's recipes that have been passed down, when they had to get creative feeding 11 children during the Great Depression. It's a favorite in our house!

Ohh does this bring back memories! My great-grandma used to make this also. i am going to have to make this over the weekend.
