Gingersnaps are used to make the gravy.
A couple of things in that recipe don't make sense to me...
I am a Sauerbraten fanatic.

I was thinking the same thing.. it's definitely not a traditional sauerbraten.. but it's maybe mild enough that the naysayers in my family would give it a try? I might have to give it a shot.

That's definitely it! She's taking some help from the pantry and she is speeding up the process. I think it's a cool idea!
I think the biggest difference you would see between this version and a more traditional version is that the version I usually use actually takes a few days because you cure the meat for 2-3 days in a mixture with vinegar and spices like juniper berry, cloves and bay. It is fairly strong sometimes - which is why my kids aren't nutty about it!
Here's a recipe that's similar to the one I use:

You should try the gingersnaps next time! They give it a nice little bite and it helps thicken the gravy a bit. When I was learning to cook it from my parents I almost had a kitten over the gingersnaps - but it gives it something!
