Anyone have a recipe for a great fritatta(did I spell that right?)? I have never made one and would love to for brunch tomorrow. TIA

You can really do any combination of flavors. This is what I've recently made: Turkey sausage and spinach with feta
Brown 3 turkey sausage links removed from casing in a non stick skillet. Remove from skillet. Add a teaspoon of olive oil and sautee onion
Mix together 2 eggs and about a cup and a half to two cups of egg whites. Stir in drained and defrosted spinach and the turkey sausage. Pour mixture in the skillet and gently stir so everything is evenly distributed. Sprinkle in some feta. Let set over med heat for a few min. Sprinkle some pam cheese on top and finish in a 375 oven for 5-8 minutes.
Flip onto a plate and slice!
