olive oil cake
for easter with the in-laws i want to make an authentic italian olive oil cake like the ones i've had in restaurants. i found a few recipes, but there's a lot of variety and i'm not sure which one to trust.
anyone have a good recipe for this? one that is dense and fruity with olive oil and light citrus? this is how they've always been when i've had them.

Have you checked Giada on the food network website? I have a recipe for Olive Oil muffins in one of her cookbooks so she may have something on there.

thanks! i found a recipe from her for almond citrus olive oil cake. i have to figure out how to get rid fo the 2/3 cup almonds from the recipe and then convert the baking time for cupcakes...
tho giada prob IS the best lady for the job.

so i ended up using this recipe (if anyone is interested)
i made cupcakes out of it, and iced them with an orange/mascarpone cream cheese icing (8oz mascarpone, 1 stick butter, tbs orange zest, 1/2 squeezed lemon, tsp vanilla, 1 cup powdered sugar)
SO YUM! can wait to bring them to the in-laws for easter.
