chicken dish for company?

any ideas for something easy to make to bring to my SIL's house for dinner this weekend?

she is having about 20-25 people and a few other dishes (pork roast, eggplant rollatini, lasagna, meatballs) and asked me to make a chicken. I don't want to make chicken parm -- kind of looking for something else. i want to be able to cut the chicken up since there so much food and i know each person won't eat a big cutlet.

recipes please!!

Sweet and sour chicken w/rice
Chicken marsala
Sticky chicken (skin on legs/breasts baked w/a mixture of chutney and ketchup)
Taco chicken (sprinkle taco seasoning on breasts, top w/salsa and cheddar cheese)
Chicken florentine (breasts in a creamy cheese and spinach sauce)
Chicken cordon bleu

OOOH I have a great one that reheats so well!!!! And it;s so easy to make!

I cut chicken cutlets in half so that the pieces are smaller and then coat them in flour seasoned with salt and pepper. Lightly brown the chicken in some olive oil and remove from the pan.

In the same pan, add 6 -8 cloves of chopped garlic and sautee for minute or so, then add a large can of diced tomatoes. Season with salt & pepper. Then add about 25 shredded basil leaves and about 1/2 stick unsalted butter to finish the sauce. Add the chicken back in and simmer.

It is so delicious. Have served this to many guests and it gets great reviews. Last time I made it I also added a can of artichoke hearts and that was a very nice touch!!

if you want to keep to the italian theme it sounds like she has going:
-chicken in white wine sauce
-lemon chicken cutlets
-chicken marsala
-chicken with olive-tomato salsa
-chicken in basil pesto

if you are not sticking to italian I recommend:
-chicken (made with mexican/taco seasoning and with grilled peppers, mushrooms or other veggies)
-arroz con pollo- chicken with rice
-asian chicken (ginger, garlic and soy sauce marinade) over white rice or veggie fried rice

this is so easy and goes over well for crowds...you can cut up the chicken before you cook it r after you cook it (before you add it back to the sauce)

1) brown boneless skinless thighs in some evoo
2) remove from pan and saute thinly sliced onion until translucent
3) add in two small cans of delmonte tomato sauce with one can of water
4) throw in some pre-cooked whole string beans(I use the steam fresh) string beans
- s/p to taste
-i eat it just wth the above or serve with bread or rice.

Salsa Chicken....

Cut up chicken. Cook in a little water.
Season water w/ garlic salt/powder, chili powder
Drain water
Add salsa

Serve over rice.


You can add black beans or corn. Serve w/ cheddar cheese.

parm crusted chicken, sooo good served with pasta and vodka sauce!

just dip chicken in buttermilk and then a mix of 2/3 cornflake crumbs and 1/3 parm cheese, fry and finish off in oven!

Chicken, Artichokes and Mushrooms

Ingredients:
family size pack of chicken breast
large jar marinated artichoke hearts
large jar marinated mushrooms (I buy both of these at BJ's)
seasoned breadcrumbs
2 cloves garlic
parsley
olive oil

Cut the chicken into chunks. Toss in breadcrumbs in a ziploc bag (think shake and bake style)

Fry the chicken in some oil like you would a cutlet.

Drain on paper towels.

Toss chicken, minced garlic, mushrooms, artichoke hearts and some of the juice from the jars (a little of each so the chicken is moist)

Add some parsley on top and a little additional olive oil if it looks a little dry.

This gets better as it sits so if you can make it a day ahead even better! Reheat covered at 350 till hot (about 45 mins)

It'll make 1/2 a large sterno tray.

My family loves it!
