Rice Recipe for Dinner
I want to make a rice & veggie dish for dinner tonight. Does anyone have any recipes they can share? I can't seem to view any recipes on Food Network's website

I love rice and peas.
I jsut make my rice as I normally would, then about 5 mins before its done i add frozen peas, parsley and a bit of butter to the rice. The 5 mins will cook the peas.
so yummy!

I make my (easy) rice in the rice cooker..
I use a packet of goya's azafran and once you see the rice is cooked (the holes in the rice) I add a can of mixed veggies and/or beans and then turn the rice and that's it.

I soak the rice for 10 mins, and then drain. Fry it in butter for a few, until moisture is gone. Then add double the water, toss in chicken bouillon cubes and cook it through. Towards the end, I add frozen veggies.. like edamame, green peas, or mixed vegetable and salt to taste.

Maybe a rice pilaf?
Add a little olive oil and butter to a pan. Add some chopped shallot, a little minced garlic and a handful of orzo (or other small pasta) to the pan and stir until veg is melted and orzo is slightly toasted (do not burn butter or garlic!). Add a cup of rice and about a half tablespoon of chicken base (or boullion) and work it into the butter/veg/orzo. Add 2 cups of chicken broth, bring to a boil and then cover and reduce heat. Let it cook for 10-15 minutes over low. Add 1 cup of peas and 1 cup of grated carrots... you can add fresh green beans or some chopped grape tomatoes if you want to pump up the veg volume.
Cover and let cook over low for another 5-10 minutes until water is absorbed and veg is cooked.
