Re: okra??

It is popular in Africa. When I was in HS I worked for my church rectory. We had a visiting priest from Africa come and stay with the church for a year.

The first night there - they wanted to prepare something for him that would remind him of home...and this was one of the sides. I tasted it and still get flash backs of it..yuck.

It out right reminds me of snot...Chat Icon

Mmm, I love okra! It tastes sort of like a green bean, but not as sweet. I prefer it IN stuff, like soup, not on its own as a side.

If it looks or tastes like snot, it hasn't been cooked right. It should still hold its shape and have some texture.

It can be a little slimy -- that's why it's used to thicken gumbo and other types of stews.

Re: okra??

the key to okra not looking like snot is to wash and dry it completely before slicing it. The okra should not be moist after its dry. Then before adding it into anything, lightly season in with salt and pepper and fry it in a little bit of oil. My MIL slices it down the middle, adds spices like cumin, paprika and salt, pepper and thyme and fries it up. It actually tastes very good.
