I skipped making lasagne last night and made...

Porcupines!

They were so fun to make and they were delicious! I was skeptical at first, and I need to tweak the sauce, but they are soooo good! I paired it with mashed potatoes and haricot verts. And I made a big pan so we have a lot of leftovers for lunch. Definitely a keeper!

They are meatballs stuffed w/uncooked rice and seasonings, then baked in a tomato sauce. Sorta like a stuffed pepper without the pepper.

Sure!

1 1/2 lbs ground beef or turkey
1 egg
1/2 c. water
3/4 c. uncooked long grain white rice
2 tbsp. worcestershire
1 tsp. garlic powder
1 tsp. celery salt
1/2 c. chopped onion
3 cloves garlic, chopped
Salt/pepper

1 8 oz. can plain tomato sauce
1 can diced tomatos, drained
1 can beef broth

Combine 11 ingredients. Form into meatballs and place in a greased baking dish. Mix remaining 3 ingredients and pour over meatballs, making sure they are nicely coated. Cover w/foil and bake at 350 for 40 minutes, then remove foil and bake for another 15 minutes.

looks amazing! but there are only 10 ingredients in the first list.

FYI: The mixture is pretty mushy, and I had to resist adding breadcrumbs (didn't want it to be too similar to my reg. meatballs) but don't worry, the rice soaks up all the liquid.

I make these but with rice a roni. I use 1 - 2 pounds of meat (depending on people) 1 - 2 boxes of beef flavored rice. Mix together with 1 egg. Then i roll them, brown them and add 2 cups water and seasoning packet. Cover and cook for 25 minutes or so. Yummo!

This was one of the first (and only) meals DH ever made for me! I had never heard of it but have since made it for him since it's one of this favorites. I usually add some green peppers to the pot so that it's even more like stuffed peppers. Yum!
