Polenta
I've been curious about polenta for a while but never had it. Is it a main dish or is it a side? (depending on the recipes I've seen I'm never sure)
Can you share your favorite polenta recipes? I'd love to finally make this.
I just saw a breakfast polenta recipe on weelicious which is what got me thinking about this again.

Try this - it was so easy and so tasty.
I used the pre-made (my mom says it looks like Jimmy Dean sausage).
I have an idea - if you use the premade - it would prob fit on the bottom of a cupcake pan. You could makde individual ones as a appitizer for a party

I've never made polenta but I too am curious about it. I've seen it grilled as little cakes too. It can be either a side or a main dish depending on what else you pair with it.

Exactly. Similar to arepas for us Latin folks  .
I've only made polenta a few times so I don't have a 'fave' recipe (just made it plain and served with some veggies and/or sauce). I remember Lidia (Lidia's Italy) making a polenta dish on her show once that I've been wanting to try. I'll see if I can find it.

Haha, now it all makes sense. I love arepas. I'll eat them plain, with toppings, stuffed, with cheese, without cheese, yummy!!!
Think I am going to try making polenta, i'll report back.

side dish
i make the recipe on the side of the cornmeal package and add:
1/2 cup of gorgonzola cheese and cream to it
or
let it cook with cilantro stems and 3 whole garlic cloves...then remove them both when cooked

I grew up on polenta and it is a meal for us.
We make it several different ways -
The most popular way we like it served with Cottacino (boiled meat) and a lentil sauce.
or
Baked with a homemade mushroom sauce and parmigiano cheese.
We also make it with gorgonzola and parmigiano cheese - you can slice it and pan fry to reheat or broil until golden and crispy & top it with gorgonzola.
ETA: The polenta should be creamy and smooth - no lumps. I have been to lots of places that serve what they call "polenta" and not even close.

My grandma made this all the time growing up. I love it... A lot of people may not like it or think it has a lot of flavor.
After it was made she would put butter on it and let it melt then put slices of muenster cheese on it. She also would make a separate one and put sauce on it.
I did Giada's recipe where she fried it and then served it with sauce.
