Could I make a "mexican lasagna"
the day before? The kind where you use the tortillas in place of the noodles? Wondering if I can cook the meat, assemble it today and put it in the oven tomorrow? Never made it before.

I think it would come out great. I make something similar and it freezes and reheats really well so I'm sure a day or two in the fridge would work just as well.
