Made a yummy vodka sauce!
Took a few recipes and adjusted them to make this one. It was awesome and so easy! I wanted to add fresh baby spinach at the end but was out so I added a few handfuls of frozen baby peas. Really like them in the sauce. DH couldn't get over it lol. It makes quite a bit for 2 people so I have a bunch leftover. Going to freeze it. Hopefully it works out well. So not healthy, but delish! Here it is:
1/2 stick butter
1 onion- diced
1 cup vodka
1 (29 oz) can tomato sauce
1 (29oz.) can tomato puree (I may use 2 purees next time for a thicker sauce- I use Tutterosso)
1/2- 3/4 pint of heavy cream
dried basil, garlic powder (didn't have fresh)
1/2 cup or so fave grated cheese (I use locatelli romano)
frozen peas or baby spinach (optional)
Sautee onion in butter. Add vodka. Cook out about 10 minutes. Add sauce/puree, garlic powder, basil. Cook for 20 minutes or so. Add cream & grated cheese. Cook a little bit more then add veggie. Once veggies are tender, serve over favorite pasta. I used fettuccini for a change. Add a little more grated cheese. YUM!

Sounds great!
But just a warning- Cream sauces don't always freeze very well...
