Alternatives to Tomato Sauce
I am looking for lower calore/ fat sauces to replace tomato sauce? I know tomato sauce is really good but it raises my blood sugars. If you can post a recipe!

How about a "raw" tomato sauce - diced tomatoes and some garlic and basil? That is good over pasta.
Also pesto is good - olive oil, basil and pine nuts in a food processer

I'm thinking about a sauce that has mushrooms, white wine, olive oil and spinach.
Not 100% sure of the recipe but if you sautee some onions, add mushrooms and frozen spinach (drained and squeezed out), maybe a little chicken stock you could have a nice sauce that is light and won't contribute sugars.
salt, pepper, red pepper flakes, oregano.
I may have to try this.

I too have blood sugar issues, although red sauce doesn't make me spike ... the pasta does. I find if I use dreamfield pasta, I am OK.
Other sauces I use are garlic & oil, garlic & white wine with chicken stock (as an above poster said, you can add veggies to it...), clam sauce. etc ... the other sauces I use have heavy cream, etc so definitely not low fat ... Good luck, I know how frustrating it is

i love taking broccoli and chicken sausage, saute them in a pan with a small amount of evoo, lots of garlic..once they're cooked, add about 1 cup of chick. broth, then toss with pasta
