Is this enough food for 10 people?
For a game night?
Quesadillas (cut up) Bagel bites Crackers and cheese Chips & Salsa (or guacamole)
And burrito pie (its like a casserole of layered cheese/tortilla/beef mixture w/refried beans, diced tomatoes and chilies) (from all recipes--

I would maybe take out the quesadillas and add something else instead. The burrito pie and the quesadillas sound like too much of the same thing.
I'd do the guacamole AND the salsa. Guacamole is super easy to make and always a good crowd pleaser.
Are you trying to do a Mexican theme? I think it could be cute, but then I'd take out the bagel bites and cheese/crackers. You can do a cheesy dip instead (then you'll have tortilla chips and three dips - guacamole, salsa & some kind of queso)
You can also do mini empanadas (stuffed with chicken or beef) or southwestern egg rolls (they have chicken, corn, black beans, etc). You could even do tex-mex potato skins (stuff with jalapeno jack cheese, guacamole, salsa, etc). You could also do chicken taquitos

It might be enough food for 10 people, depending on how much of each item you serve but I also agree with the previous posters that there should sort of be a theme with the food and then some variety in that theme. I would also serve both salsa and guacamole. Some guests prefer one over the other and they are both easy to make and serve so why not have both!

I'll do guac and salsa w/chips
mini empanadas sound great.....can I buy these or is there a simple recipe? It's Fri night so I don't know how much time I'll have beforehand to prep

For the mini empanadas, if you're REALLY short on time you can probably buy them frozen. If you're only a LITTLE short on time, you can take a shortcut by buying Goya "discos" which are little circles of empanada dough and then fill them with your choice of fillings. I like to do onion, gallic, jalapeno, ground beef and some seasonings like cumin, coriander, salt, pepper, etc. with some colby-jack cheese - then I brush with egg wash and bake at 375 for about 15-20 minutes, depending on the size.

Thanks! I will either try this or buy them....I'd rather make them so hopefully I can squeeze in some time to practice first....I hate making my guests guinea pigs
