eggs!
I have a dozen eggs that say sell by March 1st. It says sell by, not use by like my other box. When should I use all of these eggs by? I accidentally bought an extra box and I don't want it to go to waste, but what is the longest I can stretch it out until?

Eggs actually last a really long time. I've heard 3-5 weeks after their sell by date. I've used them weeks after their sell by date and it's fine.

Here's a good recipe if you're looking to use up those eggs.
I got this recipe from a poster on this site. (sorry I can't remember who). It's crust-less & soooo easy. This recipe calls for onion, spinach and munster cheese but i've used asparagus, mushroom, onion, whatever veg I have on hand. Use whatever cheese you want too. I use a little less than this recipe calls for. I actually think 2 cups is plenty.
Crust-less quiche
1 tablespoon vegetable oil 1 onion, chopped 1 (10 ounce) package frozen chopped spinach, thawed and drained 5 eggs, beaten 3 cups shredded Muenster cheese 1/4 teaspoon salt 1/8 teaspoon ground black pepper
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
** Basically all you need are the 5 eggs (I add a splash of milk) and add whatever veg & cheese you like.
