Anyone have a chicken parm recipe?
DH has been asking me to make chicken parm but I never have! Anyone have a delicious, yet easy recipe for me?

I like to use thin sliced cutlets, or I use standard cutlets and slice them in half. The cook quicker this way with less chance of burning.
Heat oven to 350.
Two separate bowls:
One with a mixture of bread crumbs and corn flake crumbs One with a couple of beaten eggs, parsley, and a little water.
Heat olive oil in a large skillet. Coat chicken in bread crumb mixture, then egg mixture, then bread crumb mixture again. Fry until golden. When cutlets are done, let cool on paper towels or paper bags (to absorb the excess oil).
Coat a baking dish with baking spray and then cover bottom of dish with sauce (I use homemade but *I guess* you could use jarred ). Place cutlets in baking dish in top of sauce. Top each cutlet with one slice mozzarella (I buy the Sorrent block of mozzarella and slice into pieces about 1/2" thick). Then sprinkle grated parmigiana over the cutlets. Top with sauce. I usually have enough cutlets that end up make 2 or 3 layers of chicken.
Bake at 350 for around 20-30 minutes.

Thanks Laura I will definatly be using jarred sauce. DH is the sauce maker in the house, not me!

My favorite recipe is a rachael ray one actually, where she uses lemon instead of egg to coat the chicken. It is soo good. And plus her sauce is so quick and easy because it is just taking canned (Crushed) and adding some flavor to it! So it's basically jarred sauce but with a little kick.
Zesty Chicken Cutlets Parmigiana
1 pound of spaghetti 3 tablespoons lemon juice 1/3 cup Parmesan cheese 1 cup Italian bread crumbs Freshly ground black pepper, to taste A pinch of crushed red pepper flakes A handful of freshly flat-leaf parsley (I usually use dried) 2 cloves of garlic 3 tablespoons extra-virgin olive oil 1 pound of thin-sliced chicken breast cutlets Grated Fresh Mozzarella
Quick Marinara Sauce
3 cloves of garlic, minced 2 pinches of crushed red pepper flakes 2 tablespooons extra-virgin olive oil 2 cans (28 ounces each) crushed tomatoes 15 to 20 basil leaves, chopped oregano and parsley (dried; to taste)
1. Bring a big pot of salted water to boil. Cook pasta until al dente.
2. Make the marinara by heating the crushed red pepper, garlic, and olive oil over medium heat until the garlic sizzles. Add in crushed tomatoes and herbs. Bring to a boil, then reduce heat to low and let sit while you prepare cutlets.
3. Pour lemon juice into a shallow dish. In a plate or pie pan, mix Parmesan, bread crumbs, pepper, red pepper flakes, and parsley. Dip the chicken cutlets in lemon juice, then in the bread crumbs, pressing to coat in breading.
4. In a frying pan over medium heat and evoo cook the chicken. When cutlets are done, arrange in an ovenproof serving dish and cover with a layer of marinara. Top with mozzarella. add another layer of sauce. repeat if necessary. Place platter under broiler to just melt cheese.
5. Take platter right to the table. Serve over Spaghetti.

I like to use light buttermilk instead of egg for breading... but bread and fry chcken, lay in single layer on baking sheet and top with your favorite sauce, then mozzerella cheese (I prefer to use it shredded cause I think it melts easier!) I usually sprinkle with some parsley or oregano. Bake until melted, we like our cheese a little brown!

I finally got a chance to make this tonight! Thanks for the recipe Laura- it came out great! I still have to try some of the other recipes you had posted.
